So what's the first thing i cooked this month?! ... cinnamon COOKIES!!
What will you need?
225g/8oz butter, softened
140g/5oz caster sugar
1 egg yolk, lightly beaten
2 tsp orange extract -- i didn't have any of this so didn't use it, however they tasted great!
280g/10oz plain flour
100g/3oz plain chocolate chips -- or your choice!
cinnamon coating
1 and half tbsp caster sugar
1 and half tbsp ground cinnamon - i also used ginger and mixed spice in smaller batches on their own to make a few different flavored cookies
- PREHEAT YOUR OVEN -- i always forget!! line 2 trays with baking paper
- put the butter and sugar in a bowl and mix together until light and fluffy! Then add the beaten egg yolk with the orange extract. Sift together the flour and salt into the mixture. Add the chocolate chips and stir until thoroughly combined.
- for the cinnamon coating (or coating of your choice!) mix together the sugar and cinnamon or your chosen spice in a shallow dish. scoop out some of the cookie dough and roll into balls, then roll lightly in the cinnamon mixture to lightly coat the dough, flatten the cookies slightly with your fingers and put on the baking trays spaced well apart!
- Bake in the preheated oven for 12-15 minutes or until turning golden brown, remember cookies cool and get slightly hard, so leave them a tiny bit soft to touch! leave to cool for 5-10 minutes.
