Welcome back to another baking blog!
Today we will be baking some delicious white chocolate cupcake treats for all the family to enjoy.
first don't forget to pre-heat your oven to 190 degrees
So you will need:
Scales
Mixing bowl
Wooden spoon or electric mixer
cupcake cases
and a cupcake baking tray
for ingredients you will need:
125g of caster sugar
125g of butter/margarine -- i use stork because as it states on the packaging "its perfect for cakes"
125g of self raising flour
2 medium eggs -- I always use free range
1 tsp of vanilla extract
75g of white chocolate chips -- i'm using cooking chocolate but breaking down into smaller pieces as this is all I have in my kitchen today.
1 tbsp milk -- optional step if your mixture seems dry
(if you don't feel their is enough chocolate for your requirements don't be afraid to add more!)
- mix the caster sugar and butter in a bowl, until light and fluffy adding the vanilla extract as well.
- now add the flour and 2 eggs and mix again until the mixture is a soft dropping consistency
- now stir in your chocolate chips and if needed the tbsp of milk. (if mixture seems dry)
- spoon the mixture into your cupcake cases -- today i've gone with cream cases with pink and green polka dots for extra cuteness
- now bake in the oven for 12-20 mintures until light and golden
- Leave to cool and then you can either decorate your cakes or if you really can't wait -- providing that other family members have already eaten these delicious treats -- ENJOY!!
